Original ChopShop is bringing bowls, breakfast and patio plans to Katy’s restaurant mix. The eatery is planned for 24646 Katy Freeway, Suite 400, at The Centre at Parkwest near I-10 and Katy Fort Bend Road.
For anyone whose lunch routine could use a change, the menu offers plenty of directions to go: a chicken bowl with avocado, a stacked sandwich, a fruit-filled açai bowl or breakfast that doesn’t end when the morning does.
Original ChopShop brings variety to the table
The brand’s current menu puts protein bowls front and center. Teriyaki Chicken comes with avocado and sesame seeds, while Thai Coconut Chicken adds peanuts and cilantro. Diners choose bases to round out their bowls.
Sandwiches offer another route. The Club layers turkey, bacon and provolone with vegetables and avocado pesto. Chicken + Prosciutto pairs its namesake ingredients with fontina, arugula, fig mostarda and Dijon.
All-day breakfast includes avocado toast topped with over-easy eggs, plus wraps and a build-your-own breakfast bowl. Juices, açai and shakes give customers options for a smaller stop, too. The Muscle Malt combines banana, peanut butter and chocolate protein flavors.
That range is part of the appeal: one person can arrive thinking breakfast while another wants lunch, with both finding something on the same menu.
Patio plans at The Centre at Parkwest
The setting adds another reason to watch this arrival. Main Street Commercial Partners markets The Centre at Parkwest as a roughly 4.47-acre development with I-10 frontage at the northeast corner of Katy Fort Bend Road.
Its conceptual site plan and rendering place Original ChopShop at one end of the building on Pad 2, with Hopdoddy at the other end. The plan labels an approximately 430-square-foot patio beside ChopShop’s space.
The rendering pictures large storefront windows, brick detailing and outdoor tables shaded by umbrellas. That would offer a place to linger over a meal along a corridor where many stops begin with a quick errand.
The neighboring building carries labels for Starbird, Woof Gang and The Kebab Shop. Together, the planned mix gives the center several dining choices within a short walk. The brochure presents a concept, so the final layout and tenant lineup may change.
When could Original ChopShop open in Katy?
The restaurant’s $450,000 finish-out covers 3,200 square feet, with Fusion-AE listed as the designer. The state registration schedules construction from November 16, 2026, through April 16, 2027. An opening date has not been announced.
For Katy diners, the draw will be what arrives at the table: a new bowl to try, breakfast on a different schedule, and a planned patio for days when lunch deserves a little more time.
