Crisp seaweed, tender rice, and a seafood-filled bite worth slowing down for. Nori Handroll Bar plans to bring its Japanese-Korean flavors to San Antonio in spring 2027, giving Pearl diners a new reason to pull up a seat and order another roll.
The Dallas-born restaurant will open at Coopers Row, 1118 E. Moreover, Elmira Street sits across the river from Pullman Market. Chef-owner Deukbok Cha’s vision centers on fresh hand rolls and a welcoming neighborhood gathering place. The appeal starts with the food: approachable enough for a casual stop, with plenty to interest someone who loves exploring a sushi menu.
Nori Handroll Bar Puts Temaki First
Hand rolls take center stage at Nori Handroll Bar. Known as temaki, they wrap rice and fillings in seaweed, forming a cone or loose cylinder that you pick up and eat. Each bite brings together the wrapper’s texture, the rice, and whatever delicious combination sits inside.
This format, however, invites a little exploration. Order one filling, discover a favorite, then leave room for something different. Instead of choosing a single large roll for the whole meal, hand rolls offer a way to build the experience bite by bite.
According to coverage of the San Antonio announcement, the existing restaurant offers seafood fillings such as king salmon, scallops, unagi, and soft-shell crab. Those current offerings provide a taste of the concept as the new location develops its own menu.
Start With Something Crispy
Nori Handroll Bar’s current Dallas menu gives diners plenty to crave beyond hand rolls. Chicken karaage pairs Japanese fried chicken with yuzu mayo. Meanwhile, rock shrimp tempura adds a creamy spicy finish to crisp, battered shrimp.
For another direction, chicken yakitori brings skewered chicken with sauce, negi, and sesame seeds. Nori Poppers combine jalapeño, cream cheese, red crab, and spicy tuna. Together, those small dishes suggest a meal that can move from crunchy and comforting to bright and spicy.
Then there are the richer bites. Dallas serves salmon sashimi with roasted garlic oil and truffle ponzu, plus A5 wagyu temaki with kizami wasabi. These are examples from Nori Handroll Bar, rather than a confirmed opening menu for Pearl.

The Nori Handroll Bar Story
Founded in 2018 in Dallas’ Deep Ellum neighborhood, Nori Handroll Bar traces its identity to Japanese cooking traditions and a modern approach to dining. Its original wood-lined setting puts the counter at the center of the experience.
Under Cha’s ownership, Nori Handroll Bar has also incorporated Korean influences. That combination gives the expansion a clear culinary personality, with hand rolls anchoring a broader exploration of flavor.
For San Antonio, the draw is that balance: a recognizable sushi favorite alongside dishes that encourage another look at the menu. It is an easy concept to imagine sharing with someone who always wants to try one more thing.
A New Dining Stop at Pearl
Coopers Row places the upcoming restaurant within Pearl’s growing dining neighborhood. Nori Handroll Bar plans to join that setting with an experience built around fresh food and an approachable atmosphere.
The announced target is spring 2027, although an exact opening day has not been released. The approximately 2,995-square-foot restaurant will occupy an existing building at 1118 E. Elmira Street, Building 1.
A state project filing lists a $557,375 interior finish-out, with estimated construction dates of September 28, 2026, through April 16, 2027. The opening announcement, rather than those construction estimates, sets the season diners should watch.
