Luna Grill Waxahachie plans would bring kabobs, gyros and Mediterranean bowls to the new Plaza at Bessie Coleman, adding a fresh dining option to the Sprouts-anchored shopping center.
The restaurant is planned for 140 Bessie Coleman Boulevard, Suite 100. Based on the company’s currently available location information, it appears to be Luna Grill’s first Waxahachie restaurant.
The official Luna Grill directory does not currently list a Waxahachie location. That supports the apparent debut, although the project details do not amount to a company announcement of a grand opening.
Luna Grill Waxahachie Brings a Mediterranean Option
Luna Grill’s official menu offers a useful preview of the concept: flame-grilled kabobs, gyro meat and falafel served in formats that range from plates to bowls and pita wraps. Hummus, salads and sauces give those meals different textures and flavors.
A diner could make a meal of a kabob plate with pita and sides, or choose a bowl layered with grains, vegetables and sauce. That flexibility is part of the appeal for a lunch stop or an easy dinner after shopping.
The brand’s current offerings also include a roasted garlic lemon chicken kabob and a Santorini bowl with ingredients such as hummus, olives and pickled onions. These examples describe the broader Luna Grill menu; the final Waxahachie selection and prices have not been announced.
A Place in the Plaza at Bessie Coleman
The Luna Grill Waxahachie restaurant would occupy 2,500 square feet within the new center. The development site plan shows its planned space in the same row as smaller service and retail businesses, close to the much larger Sprouts Farmers Market footprint.
Sprouts provides the grocery anchor, while names such as Potbelly and Hollywood Feed illustrate the mix of food and everyday shopping shown on the plan. The drawing depicts planned locations, not proof that every listed business is open.
For customers, that setting could make the restaurant part of an ordinary errand run: groceries at the anchor store, another stop nearby and a Mediterranean meal before heading home. It also gives residents a specific place to watch as the development fills in.
The project adds a different type of dining option to the local restaurant pipeline. TCM has also covered Texas Roadhouse’s planned Waxahachie steakhouse, another restaurant project drawing attention in the city.
Luna Grill Waxahachie Construction Plans
The restaurant work involves a first-generation tenant improvement inside existing shell space. That means creating the restaurant interior within a building space that has not previously been finished out for a tenant.
The registered construction value is $400,000, with work currently scheduled from February through May 2027. The scope covers approximately 2,500 square feet.
May 2027 is the estimated end of the construction window, not an announced opening date. A separate opening announcement will be needed before diners can put a first visit on the calendar.
For now, Luna Grill Waxahachie plans offer a clear prospect for the new plaza: a Mediterranean restaurant where shoppers could trade another routine lunch for kabobs, hummus and a bowl full of flavor.
