Jersey Mike’s plans a new restaurant at 1831 E 87th St., Suite 104, bringing another stop for freshly sliced subs and hot cheesesteaks to Odessa. Think layers of meat and cheese, crunchy lettuce, and that tangy splash of oil and vinegar soaking into the bread.
Jersey Mike’s brings the slices—and the flavor
The appeal starts behind the counter. Jersey Mike’s slices meats and cheeses to order and bakes its bread in-store. Customers watch their sandwiches come together, from the first slices to the finishing toppings.
For a loaded lunch, the Original Italian stacks provolone with ham, prosciuttini, cappacuolo, salami, and pepperoni. That is a lot of savory flavor before the vegetables even enter the picture.
Then come two words regulars know well: Mike’s Way. That adds onions, lettuce, tomatoes, oil, vinegar, and spices. The vegetables bring crunch, while the dressing gives the sandwich its signature tang.

Jersey Mike’s traces its roots to Mike’s Subs, which opened in Point Pleasant, New Jersey, in 1956. In 1975, employee Peter Cancro bought the shop when he was just 17. His football coach, who was also a banker, helped back the loan.

Another sandwich stop for Odessa
The new restaurant adds to the brand’s existing Odessa presence. Jersey Mike’s already lists a location at 7270 E. Highway 191, Suite 214. The East 87th Street project gives local fans another address to look forward to.
The TDLR registration, TABS2026027528, outlines a $450,000 renovation of 1,517 square feet inside an existing strip center. Plans include kitchen equipment, interior walls, and mechanical, electrical, and plumbing work.
The registered construction schedule runs from September 14 through October 26, 2026. October 26 is the estimated construction completion date, not a confirmed opening day.
