Atos International Cuisine is planned for 1219 Grand Central Parkway, Unit 105, in Conroe. A new state filing outlines a 1,225-square-foot restaurant buildout with an estimated construction cost of $150,000.

The name offers an intriguing lead for food lovers. An existing Spring food truck called ATOS International Cuisine serves a menu that travels from fish tacos and stacked burgers to seared salmon and crème brûlée. The connection between that operation and the Conroe project has not yet been independently confirmed, and Conroe’s opening menu remains unannounced.

Registration TABS2027000603 describes an interior restaurant buildout, with construction scheduled from September 23, 2026, through March 23, 2027. The tenant is providing the private funding, according to the filing. Those dates describe the planned construction window, rather than a confirmed opening day.

This address already has a dining connection. Visit Conroe lists Ruah Cafe at 1219 Grand Central Parkway, Suite 100. The ATOS filing specifies Unit 105, a different suite number. It does not identify a previous tenant or announce a replacement for Ruah.

A Look at the Atos International Cuisine Menu in Spring

The existing operation’s published food menu makes its international approach easy to understand. Its Big Dream Burger combines beef, bacon, egg, pepper jack, onion strings, and mustard cream sauce. The Pretzel Burger takes a different route with caramelized onions, mushrooms, cheddar, and homemade mayonnaise.

Seafood gets plenty of attention. Fish tacos pair cod with cabbage, avocado, and morita sauce. Other taco choices include shrimp, blackened salmon, arrachera, jackfruit, and vegan chorizo.

For a fork-and-knife meal, Cajun linguine comes with cream sauce, peppers, and salmon or shrimp. Seared salmon arrives with mashed potatoes, broccoli, jumbo shrimp, and lemon beurre blanc. Vanilla crème brûlée provides a sweet finish.

These are examples from the Spring menu, not confirmed offerings for Conroe. Still, they explain why the matching restaurant name caught our attention: this is a food-truck menu with room for both a hefty burger and a carefully plated seafood dinner.

The Hospitality Background Behind ATOS

In a July 2025 interview with VoyageHouston, Edgar Herrera traced his hospitality career to a Japanese restaurant in 2008. He later gained experience in Mexican, Italian, and American concepts, as well as catering.

Herrera said he took an international-cuisine course during the pandemic. In 2023, his brother invited him to join the ATOS project. The food truck gave them a place to develop their ideas and put their hospitality experience to work.

He also described the less glamorous side: learning how to start a food truck, working with vendors, and maintaining fresh ingredients and consistency during slower periods. That background gives the Spring operation a personal story beyond its menu.

Atos International Cuisine Adds Mocktails to the Mix

The Spring business also publishes a mocktail menu. Options include a strawberry mojito, frozen piña colada, flavored Arnold Palmer, and virgin sangria made with fruit and juices.

That brings another choice to the table alongside the food. The menu labels these drinks as mocktails; it does not establish alcohol service for the proposed Conroe restaurant.

What Comes Next for Atos International Cuisine in Conroe

ATOS’s official contact page currently lists 24600 Gosling Road in Spring. A public announcement confirming whether Conroe represents an additional location, a relocation, or another arrangement has not been located.

For now, the Conroe news is the registered restaurant project on Grand Central Parkway. Confirmation from the operator would fill in the next details readers will want: the team behind the space, the opening menu, and when the first plates will reach the table.
