Compadre Cookers is planning a new place for customers to sit down alongside its existing barbecue trailer in downtown Rosenberg. A state construction filing describes a 3,000-square-foot metal building at 909 4th St., with an estimated construction cost of $250,000.
The project expands a local operation with a competition-barbecue background. Rodeo Austin’s official 2020 results list Eric Rosales and Compadre Cookers fourth in chicken and seventh in ribs, each against 157 entries. The new building would add a permanent seating space beside the trailer.
A Seating Building for the Barbecue Trailer
The Texas Department of Licensing and Regulation filing, registered November 2, 2026, identifies the work as new construction on private property. Eric Rosales is listed as the owner and filer. The record does not specify a seating capacity, floor plan or changes to the trailer.
The filing estimates construction from December 4, 2026, to February 4, 2027. Those are planning estimates, not a confirmed opening schedule. Registration for state accessibility review does not itself establish that a building permit has been issued or that construction has begun.

Tex-Mex Barbecue on 4th Street
Compadre Cookers describes its food as Tex-Mex barbecue, with brisket, ribs, chicken, brisket tacos and sides among the offerings on its website. The business also offers catering and says its restaurant is coming soon.
The food truck’s posted hours are Thursday through Saturday, 11 a.m. to 3 p.m. or until sold out. Its catering work also connects it with local institutions: Lamar CISD reported that Compadre Cookers served barbecue at the Lamar Educational Awards Foundation’s March 26, 2026, Clays for Classrooms fundraiser, an event supporting teacher grants, student opportunities and district educational programs.
A city calendar listing placed the Compadres Cookers food truck at 909 4th St. for an event in August 2022. The planned seating building would give customers another way to enjoy barbecue at the downtown stop.
More Local Restaurant Activity
Elsewhere in Rosenberg, Marco’s Pizza has plans for a takeout location, while Pinchin Crab is already serving seafood. At 4th Street, Compadre’s proposal would bring a dedicated seating building to a familiar barbecue stop.
