A Texas accessibility filing lists an $800,000 interior finish-out of 2,178 square feet, with construction scheduled from January 18 through May 14, 2027. The completion date is a construction estimate, not an announced opening day.
For diners, the appeal starts with a choice: build a bowl, tuck the meal into a pita or let a signature combination handle the decisions. From there, creamy dips, tangy toppings and spicy sauces can take lunch in several directions.
CAVA plans a familiar Gates of Prosper address
The shopping center’s tenant directory lists Pie Five Pizza at the same address and suite named in the CAVA filing. Smallcakes Cupcakery is listed next door in Suite 20. The address match helps place the proposed restaurant, although the directory does not establish the timing of a tenant change.
The Gates of Prosper sits at Preston Road and U.S. 380. The Retail Connection markets the development as a regional shopping destination serving Prosper, Celina and nearby communities. A restaurant stop here can fit into a much longer shopping list.
Three childhood friends and a Greek kitchen
CAVA’s roots go back to 2006, when childhood friends Ted Xenohristos, Ike Grigoropoulos and Dimitri Moshovitis opened the sit-down CAVA Mezze restaurant in Rockville, Maryland. All three were sons of Greek immigrants, drawing on the food they grew up eating, according to longtime investor Invus’s account of the company’s history.
Their first chapter centered on mezze: small plates made for sharing. A packaged-food business followed, and Brett Schulman joined as a fourth partner. In 2011, they opened the first fast-casual CAVA, bringing those Mediterranean flavors into a more convenient restaurant format.
That progression gives the bowl-and-pita counter a backstory rooted in shared meals. The serving format changed, but dips and spreads remained part of the experience.
CAVA brings bowls, pitas and plenty of flavor
One example from CAVA’s featured menu is the Harissa Avocado Bowl. It layers harissa honey chicken, Crazy Feta, hummus, avocado, corn, cucumber and pickled onions over rice and greens, with harissa vinaigrette.
That combination puts sweet heat, creamy dips and crisp vegetables in the same meal. A pita offers another way to enjoy the restaurant’s mix of proteins, vegetables and sauces, with the bread becoming part of every bite.
