The connection between that operation and the Conroe project has not yet been independently confirmed, and Conroe’s opening menu remains unannounced.
Atos International Cuisine Plans a Grand Central Parkway Space
Registration TABS2027000603 describes an interior restaurant buildout, with construction scheduled from September 23, 2026, through March 23, 2027. The tenant is providing the private funding, according to the filing. Those dates describe the planned construction window, rather than a confirmed opening day.
This address already has a dining connection. Visit Conroe lists Ruah Cafe at 1219 Grand Central Parkway, Suite 100. The ATOS filing specifies Unit 105, a different suite number. It does not identify a previous tenant or announce a replacement for Ruah.
A Look at the Atos International Cuisine Menu in Spring
The existing operation’s published food menu makes its international approach easy to understand. Its Big Dream Burger combines beef, bacon, egg, pepper jack, onion strings, and mustard cream sauce. The Pretzel Burger takes a different route with caramelized onions, mushrooms, cheddar, and homemade mayonnaise.

In a July 2025 interview with VoyageHouston, Edgar Herrera traced his hospitality career to a Japanese restaurant in 2008. He later gained experience in Mexican, Italian, and American concepts, as well as catering.
Herrera said he took an international-cuisine course during the pandemic. In 2023, his brother invited him to join the ATOS project. The food truck gave them a place to develop their ideas and put their hospitality experience to work.
He also described the less glamorous side: learning how to start a food truck, working with vendors, and maintaining fresh ingredients and consistency during slower periods. That background gives the Spring operation a personal story beyond its menu.

Atos International Cuisine Adds Mocktails to the Mix
